This vegan ground beef stir-fry is so delicious! This product is by far the best meat replacement I’ve come across. This dish is big on flavour and so good for you! The prep is very minimal and can be on your plate ready to eat in less than 15 minutes.

Ingredients

  • ¾ cup Gardiens meat-less ground beef
  • ½ red, yellow or orange pepper
  • 1 cup of kale
  • 4 sliced mushrooms
  • ½ zucchini 
  • 6 carrot sticks
  • 1 cup broccoli
  • 3 tbsp. PC MEMORIES OF Szechwan Spicy Peanut Satay Sauce
  • 1 tsp. curry powder
  • 2 tsp. sea salt

 

Instructions

1.   Steam carrot sticks and broccoli in hot water for 6 minutes. Place peppers and zucchini slices in oven on boil for 5-6 minutes (charred on outside). In a non-stick frying pan sauté mushrooms at medium heat for 4 minutes. 

2.     Add kale and meat substitute into frying pan, cook for 3 minutes. Add in steamed broccoli and carrots. Cook for additional 3 minutes

5.     Sprinkle in curry powder and salt 

6.     Add roasted peppers and zucchini

7.     Drizzle peanut sauce on top
