One of my go-to quick and inexpensive recipes that I always find myself making whether it's when my ingredients in the kitchen are low or I’m craving a healthy high protein snack.

Recipe serving size (15) snack size bites

Ingredient List 

2 cans light white flake tuna

2 tbsp. ground flaxseed

1/3 cup egg whites

2 tbsp. minced onion

1 tbsp. coconut oil

3 tbsp. no sugar added ketchup (optional or substituted with preferred thick based sauce)

1 tsp. curry powder

1 tbsp. roasted red pepper seasoning salt (or seasoning flavour of your choice)

1 cup  raw kale

 

 instructions

1.     Turn on fryer to medium heat 

2.     Drain water from tuna cans, then add to medium size mixing bowl

3.     Add all other ingredients to mixing bowl and stir 

4.     Steam kale for 30 seconds, or until fully steamed. When finished break into small pieces. Stir into mixing bowl

Helpful tip: Kale should be in small pieces, or balls might  break apart

5.  Spray fryer with non-stick spray (I prefer the coconut oil non-stick kind) then start rolling mixture into bite sized balls

  • Helpful Tip: squeeze access moisture, the balls should be as tight as possible

6.     Place balls on fryer for 10-12 minutes, rotate sides every 4 minutes

8.  Once bites are cooked, lay out to cool down.
